PREPARATION:  step-by-step photographed recipe

in a bowl sieve the flour, add salt and then water
knead the dough until a thick ball without lumps (5/6 minutes)
divide the dough to small balls and flour a towel where you are going to roll it

Roll the dough with the rolling pin neither too thin nor thick, just a 1/2 to 3/4 inch (2 mm)

 

refold gently the floured dough
 

cut to strips as long as your inch

now lay to the strips the counter flouring them

 

Put each lay between your hands and rubbing them together roll a until obtaining the "strozzapreti" as shown
the result will be a rolled pasta, very suitable for taking the sauce
Remember to flour the towel where you put the strozzapreti onto.

let them rest half an hour before boiling.
