Notes to the recipe: the stracciatella is a cheese produced either from the milk of water buffalo or from the milk of the cow. It is a fresh cheese, white in colour, and made in the pasta filata style. It is very similar to mozzarella, but more creamy. It is cut to strips and sold in a creamy liquid.
