Notes to the recipe: as for the most famous recipes there are many tales about. Somebody say that their name is due to the fact that this dish was dedicated to the Norma of Bellini. Other people say that an officer of the new kingdom of Italy, end of the 19th century, ate this dish in Sicily for the first time and he found it "fuori dalla norma", that we could translate with "out of the normal standard" ," awesome". We can say that this dish is really excellent, specially if made with homemade macaroni!
