PREPARATION: step-by-step photographed recipe

remove the external leaves and the core of the cabbage and slice finely, in the meantime prepare the vegetable broth/stock
cleanse the leek and cut to rings
peel the potatoes and cut to small cubes
put the cabbage and the leek in a great pan, keep some leek ring apart
add the broth/stock, not too much if you like a dense soup, as the cabbage has much water
and the potatoes
cut the speck to small cubes removing some fat, not all
fry slightly in a pan without fat
as soon as frying add the leek you have kept apart
they should become crunchy
as soon as the potatoes are softened put the soup into the dishes, and spread on t the browned speck
serve with pepper and bread slices
