  Recipe:  umbrichelli all'amatriciana, Italian traditional recipe from Umbria.

This recipe has an interesting history: it is a typical  dish of Orvieto, combining the Umbrian origins  (the Umbrichelli) with a very Roman (or better of Latium ) sauce like the Amatriciana . It happens because the history of both towns is connected from centuries, trough invasions, trade agreements, joint ventures…it is a very animated relation. If you can visit this town is really enchanting, also for the cuisine.
