PREPARATION: "school of cuisine"

rinse well the berries 
remove all the peduncles, the berries have not seeds
put into a large bowl
cover with sugar
sterilize the pots by boiling them in a pot with a basket  (for avoiding any contact) with the top toward the bottom
stir well until the sugar is melted and then at intervals for avoiding them to stick to the pot. Cook at low heat
spill hot into the pots 
 

the pots must be dried and put in the hot water

close and boil 10 minutes for obtaining the "under vacuum"
