The strawberry jam is a very popular recipe, and one of the easiest to make. For making an excellent homemade jam you need very few: at first good and  mellow strawberries. The fruits are the jam spirit, so if the strawberries are immature or insipid you will waste your time as the jam will not be good.

Notes to the recipe: As you can see in the picture with the ingredients we suggest to use the pectin: this ingredient, derived from quince, allows to use less sugar, requiring less time for cooking and preserving more vitamins; it permits also a better conservation. Should you not like to use pectin change the doses: for 1 Kg (LBS 2) of cleansed strawberries use 800 grams ( OZ 28+1/4) of sugar.
