a classic sweet of the Italian tradition: not too easy to make at home, but of great satisfaction. A curiosity. the colomba (dove), the traditional cake for Easter, was launched with this recipe by a great candy maker of Milan, Angelo Motta, which invented a version for Easter of the Panettone. But if we investigate more carefully about its origins we find cakes in a shape of dove in the ancient Rome: the ancient colomba was symbol of peace and it was made with bread. We have traces of sweet bread in the shape of dove in the year 500 in Pavia and in the year 1000 in Legnano, both towns are near Milan. This the traditional recipe, for a perfect cake, as from an Italian bakery.
Notes to the recipe: for cooking the colomba on commerce are available many baking pans with the typical shape of flying dove, either in oven paper or metallic, which make the work without a doubt easier. Should you wish to make it without the baking pan you can try to make it by hand...as people made at once.
