Pan di Spagna is a recipe basis for many other dessert recipes. This recipe is inspired by Pellegino Artusi's recipe book, we changed only the flavour, using the cocoa instead the lemon.

Notes to the recipe: Pan di spagna is a basic recipe, basis for many cakes, desserts, sweets. Due its spongy consistence is used in the traditional cooking for sweets with liquors, as zuppa inglese, or other creamy desserts. Among them we have the traditional Christmas recipe of tronchetto di natale (in italian "Christmas little trunk", due its shape). Pan di Spagna is not difficult to make, you should only to pay attention during baking, as shown in our photographed recipe. About the ingredients the flour must be of good quality and very fine milled. The sugar powder is better than the standard sugar as it helps for giving the spongy consistence.
