Notes to the recipe: caprese salad, the famous salad which takes its name from de island of Capri, is a simply and fresh cold dish. As for all the simply recipes we must pay a particular attention to the ingredients quality: they must be of excellent quality for a guarantee of a delicious recipe. We begin with mozzarella cheese, which shall be very fresh: make your choice whether made  with buffalo or cow milk: it is not important the kind of milk, but the quality! It should be thick, with the "peel" hard and loosing little drops by cutting, without any smell. The tomatoes must be very mellow and of any quality, the only important is the freshness. The basil must be fresh too. The oil must be extra virgin, fruity and intense.
