   PREPARATION: step-by-step photographed recipe

Clean up and slice the PUMPKIN.

Chop the pistachios in the mortar with the pestle

until to obtain grains. 

Put the PUMPKIN into a pot adding 1 cup of vegetable broth and let it boil UNTIL SOFTENED

Cut the oranges and keep the central slice, you will use it to garnish the dishes

press the oranges.

AS SOON AS THE PUMPKIN is boiled add the flour and blend until a homogeneous cream. add the orange juice ( taking the pot away from the stove for preserving the vitamins) and blend.

Put the cream into the dishes and sprinkle with the chopped pistachios. Garnish with the orange slices and serve.
