Note to the recipe: the wild boar is widespread in Italy and easy to find in the central regions as Tuscany, Umbria, Marche, Romagna, Abruzzi, Latium. For this reason we can find it in many traditional recipes. The marinade is very important. If you buy the wild boar directly from the hunter it is necessary to marinate the meat at first 24 hours in white wine and again before cooking as shown in the photographed recipe. Otherwise, if you buy in a shop, it already had a first marinade. There are two kinds of marinades: the white and the red. The red one gives to the meat a stronger flavour.
