rinse and slice the tomatoes. in the meantime boil the water
in a pan fry slightly the olive oil
add crushed garlic and a half of the tomatoes
salt and boil the tomatoes until a rather dense sauce. It is possible to sieve it for making a more homogeneous sauce.
put the orecchiette into the salted boiling water
add to the sauce the other half of the tomatoes and stop the heat:this is the trick. You will have a dense sauce and the flavor of the just scalded tomatoes
add the basil and keep some leaves for garnishing
drain well the orecchiette and saute in the sauce
serve with coarse grated salted ricotta (ricotta salata)
