Notes to the recipe: Pan di spagna is a basic recipe, basis for many cakes, desserts, sweets. Because of its spongy consistence is used in the traditional cooking for sweets with liquors, as zuppa inglese, or other creamy desserts. Among them we have the traditional Christmas recipe of tronchetto di natale (in italian "Christmas little trunk", because of its shape). Pan di Spagna is not difficult to make, you should only to pay attention during baking, as shown in our photographed recipe. About the ingredients the flour must be of good quality and very fine milled. The sugar powder is better than the standard sugar as it helps for giving the spongy consistence.
