PREPARATION: step-by-step photographed recipe

rinse the barley and soak for at least one hour
in the meantime cleanse the vegetables
chop with the speck
soak the dried mushrooms in tepid water
fry slightly in very few olive oil the chopped speck and vegetables

add the barley

stir for one minute
add the meat broth/stock, better if hot
boil for 40 minutes stirring at intervals
squeeze the mushrooms to dry and add . if the soup is too dense add water


slice the Savoy cabbage
ad to the soup and boil 3-4 minutes
serve the soup hot and without cheese
