Notes to recipe: Amatriciana sauce takes its name from the village of Amatrice, in Latium. It is a sauce recipe for seasoning spaghetti, homemade pasta and other dried pasta varieties. It was the sauce made by the shepherds with the available ingredients made by themselves: guanciale, pecorino cheese and pasta. Now tomato sauce and a little of olive oil have been added, for making amatriciana sauce less rustic and with a more gently taste!Amatriciana sauce is made using the Guanciale, made with pork jaws. As it is very difficult to find it you can use also standard bacon.
