Notes to the recipe: the tomato and basil sauce is the easiest sauce for seasoning each kind of semolina pasta. The orecchiette are also a very easy recipe to make, as you can see in our basic recipe. So it will be very easy to make this authentic Italian recipe! The traditional recipe requires the salted ricotta (ricotta salata). It is a seasoned cheese, that is different from ricotta, a soft fresh cheese. Should you  not find salted ricotta you can use parmesan cheese or other salted seasoned cheese. It is also a good cold dish for the summer.
