Notes to recipe: You can use for the sauce either the sheep or the castrated young male: the important is that the animals must be young, whose meat is tender and with a softer taste. The gnocchi, soft and sweet, reduces the strong flavour of the sauce and creates a very agreeable recipe for the winter. Suitable also as Easter recipe.
